Bagel Breakfast Sandwich (Aka Hill-Agel)

  1. Scramble eggs and salsa together then pour into a small, lightly greased microwave safe dish (as close to the size and shape of your bagel as possible). Microwave in 1-2 minute increments, stirring between each, until eggs are solidified but still fluffy.
  2. If you are happy with the eggs the way they are, perfect! If you like them a little more well done (as my boyfriend does) or perhaps flattened down a bit (so you don't have to unhinge your jaw in order to eat the sandwich) heat olive oil in a sauce pan and swirl it around so it lightly coats the pan. Transfer eggs from the dish to the pan. Let it cook for a couple minutes while lightly pressing down with a spatula in order to flatten the eggs into a patty. Flip and repeat on the other side until eggs are done to your desire.
  3. Cut the bagel in half and place face up in a toaster oven (or oven, or broiler) with one slice of cheese on each half. Toast for 3-5 minutes until cheese just starts to bubble. Let it cool down then take it out and add the avocado, tomato, onion, bacon and spices to the bottom half of the bagel.
  4. With your spatula move the egg patty from the pan to the bagel bottom. Top it off with the other half of the bagel and enjoy!
  5. Optional: Instead of putting the toppings and spices on separately, you can mix them up (almost like guacamole) and smush it all on at the same time. Similarly, you can scramble the bacon in with the eggs. The flavors may not be as potent when combined in advance but they're still delicious!nPS: If you like your bagel a little more well done (like me... I like everything nearly burnt), toast the bagel before even adding the cheese
