Pan Fried Chicken And Gravy
- 1 pound chicken breasts
- 1 stick butter
- 1/2 cup onions chopped
- 1 can cream of chicken
- chicken stock or water
- 2 tablespoons salt
- 2 tablespoons pepper
- 2 cups rice
- Cook rice according to instruction and set aside
- Cut chicken breasts into quarters
- Season chicken breasts generously
- Chop onion and set aside
- Using a medium sized pot, put one half stick of butter in the pot and turn the heat on medium low.
- Add onion and let simmer for 5 min
- Put heat on medium high and add chicken to the pot and let cook on each side for about 3 min
- Keeping an eye on the chicken, continuously turn the chicken to brown all sides
- Remove chicken from pot once cooked and add one half cup of chicken stock or water and put the heat on medium low.
- Add 1 can cream of chicken and stir
- Put chicken into gravy and cover. Turn off heat.
- Serve over rice and add preferred vegetables or sides
