Rustic Oven Fries With Barbecue Sauce By Christophe Michalak

  1. Peel the onion and cut into chunks.
  2. Peel the garlic.
  3. Peel the red pepper by removing the skin, stem, and seeds. Cut strips of medium size.
  4. In a saucepan, heat 1 tablespoon of olive oil and brown the onion. Add the garlic, pepper, honey, tomato paste, ketchup, Worcestershire sauce, wine, mustard, and broth. Check seasoning, and add salt if necessary. Allow to cook for 15 minutes.
  5. Mix with a blender to obtain a smooth texture.
  6. Turn the oven to 220 degrees Celsius.
  7. Wash the potatoes. Dry them.
  8. Cut into thick fries, keeping the skin on.
  9. Spread them on a baking tray. Drizzle 2 tablespoons of oil, salt and thyme over the potatoes. Mix well (with your hands) so that the potatoes are well coated with the mixture.
  10. Bake for 35 to 40 minutes depending on the size of your fries.
