Greek Salad With Fried Feta
- 6 3/4 tablespoons white wine vinegar
- 1 pinch caster sugar
- 5 1/3 tablespoons parsley finely chopped
- 7 tablespoons olive oil
- 3 3/8 cups tomatoes diced
- 1 cucumber diced
- 1 onion diced
- 1 lettuce chopped
- 9/16 cup black olives
- 1 1/3 cups feta sliced
- 1 egg beaten
- 7 3/8 tablespoons breadcrumbs
- Whisk the vinegar, sugar and 3/4 of the parsley together and season. Whisk in 5 tbsp oil. Mix the tomatoes, cucumber, onion, lettuce and olives with the vinaigrette and set aside.
- Dip each slice of feta in the beaten egg then cover with breadcrumbs and press down lightly so that the breadcrumbs stick to the feta. Heat 2 tbsp oil in a pan, add the feta and fry each piece for 1-2 mins on each side until golden. Divide the salad between 4 plates and place the feta on top.
