Asopao De Camarones

  1. Rinse the shrimp with cold water
  2. Remove the shells from the tails and save them for later. Devein if needed.
  3. In a large pot, add the water and shrimp shells. Boil for 5 minutes.
  4. Remove the shrimp shells (now you can discard these) after they turn orange.
  5. Add the garlic, pepper, cilantro, tomato sauce, bay leaf, annatto oil, sofrito, capers/olives, saffron, and red pepper flakes.
  6. Add salt & pepper to taste
  7. Let the ingredients boil for about 5 minutes.
  8. After the broth is to your liking add the rice.
  9. After the rice is cooked, add the shrimp.
  10. After the shrimp are cooked or orange (about 5-10 minutes) turn off the burner and remove the pot from the heat.
  11. Let it rest for 3-5 minutes and enjoy!
