Asopao De Camarones
- 1 pound shrimps fresh, raw, with the tail/shell, 16/20
- 6 cups water
- 1/2 cup rice
- 4 ounces tomato sauce spanish style
- 6 garlic cloves crushed
- 1 red bell pepper diced
- 2 tablespoons cilantro leaves fresh
- 1 bay leaf
- 4 tablespoons annatto oil
- 2 tablespoons sofrito
- 3 tablespoons capers or olives
- 1 pinch saffron
- salt
- red pepper flake to taste
- Rinse the shrimp with cold water
- Remove the shells from the tails and save them for later. Devein if needed.
- In a large pot, add the water and shrimp shells. Boil for 5 minutes.
- Remove the shrimp shells (now you can discard these) after they turn orange.
- Add the garlic, pepper, cilantro, tomato sauce, bay leaf, annatto oil, sofrito, capers/olives, saffron, and red pepper flakes.
- Add salt & pepper to taste
- Let the ingredients boil for about 5 minutes.
- After the broth is to your liking add the rice.
- After the rice is cooked, add the shrimp.
- After the shrimp are cooked or orange (about 5-10 minutes) turn off the burner and remove the pot from the heat.
- Let it rest for 3-5 minutes and enjoy!
