Duck And Sausage Gumbo
- 1 large duck
- 1 c. roux (purchased roux)
- 3 1/2 qt. water (broth off duck)
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. red cayenne pepper
- 1/2 tsp. monosodium glutamate
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1 rib celery, chopped
- 1 lb. sausage, cut in slices
- 2 Tbsp. Cajun seasoning
- Boil duck, using salt, pepper and 2 tablespoons Cajun seasoning.
- Debone duck.
- Use the liquid in gumbo.
- Dissolve roux in water over medium heat.
- Add salt, pepper, monosodium glutamate and chopped vegetables.
- Add deboned duck and sausage.
- Bring to a boil, then lower heat and cook until tender, 1 1/2 to 2 hours. Serve over cooked rice.
- Add okra, if desired.
