Christmas Cookies With Vanilla & Cardamom
- 3/4 cup butter soft
- 1 1/4 cups brown sugar
- 1 tablespoon vanilla extract
- 1 tablespoon vanilla ground
- 1 tablespoon ground cardamom
- 2 cups flour
- 2 egg yolks
- 2/3 teaspoon salt
- Preheat oven to 180 degrees Celsius.
- Mix soft butter until creamy.
- Add sugar, salt, vanilla extract, ground vanilla, and cardamom and stir everything together with a spatula. Once creamy, add the egg yolks, continue stirring. Add the flour gradually and mix until the dough takes shape. Finish mixing by hand.
- Form a ball of dough and refrigerate for 30 minutes.
- On a floured surface, roll out the dough to 5-6 millimeters thick.
- Cut out small pieces of dough with a fluted pastry cutter.
- Place the cookies on a baking sheet lined with parchment paper, and bake for 14 minutes or a little less for softer cookies.
- Cool on a biscuit grill.
