Christmas Cookies With Vanilla & Cardamom

  1. Preheat oven to 180 degrees Celsius.
  2. Mix soft butter until creamy.
  3. Add sugar, salt, vanilla extract, ground vanilla, and cardamom and stir everything together with a spatula. Once creamy, add the egg yolks, continue stirring. Add the flour gradually and mix until the dough takes shape. Finish mixing by hand.
  4. Form a ball of dough and refrigerate for 30 minutes.
  5. On a floured surface, roll out the dough to 5-6 millimeters thick.
  6. Cut out small pieces of dough with a fluted pastry cutter.
  7. Place the cookies on a baking sheet lined with parchment paper, and bake for 14 minutes or a little less for softer cookies.
  8. Cool on a biscuit grill.
