Pears In Tea Syrup
- 1 1/4 cups water
- 1 tablespoon cinnamon black tea flavored with, and apple, It-tea
- 3 pears Rocha
- 1 cinnamon stick
- 4 3/4 tablespoons sugar
- 1 9/16 tablespoons starch
- 1 egg yolk
- almond flakes to sprinkle
- Bring water to boil in a saucepan.
- Remove from heat, add tea.
- Let tea steep.
- Peel the pears, and cut into quarters (removing the lumps).
- Strain the tea, add pear quarters, cinnamon stick, and sugar.
- Return to heat, and boil for 20 minutes, or until fruit is soft and tender.
- Dissolve the starch in the egg yolk, and set aside.
- Using a skimmer, remove the pears and cinnamon stick from tea, and slowly add the dissolved yolk and starch, stirring with a whisk.
- Bring to boil again on low heat to thicken, constantly stirring.
- Divide the pears into cups, and drizzle with the tea syrup.
- Sprinkle with almond flakes, or chopped walnuts.
