Pears In Tea Syrup

  1. Bring water to boil in a saucepan.
  2. Remove from heat, add tea.
  3. Let tea steep.
  4. Peel the pears, and cut into quarters (removing the lumps).
  5. Strain the tea, add pear quarters, cinnamon stick, and sugar.
  6. Return to heat, and boil for 20 minutes, or until fruit is soft and tender.
  7. Dissolve the starch in the egg yolk, and set aside.
  8. Using a skimmer, remove the pears and cinnamon stick from tea, and slowly add the dissolved yolk and starch, stirring with a whisk.
  9. Bring to boil again on low heat to thicken, constantly stirring.
  10. Divide the pears into cups, and drizzle with the tea syrup.
  11. Sprinkle with almond flakes, or chopped walnuts.
