Chocolate-Banana Cake
- 2 (1 oz.) sq. unsweetened chocolate
- 1 c. butter or margarine, softened
- 2 3/4 c. sugar
- 3 eggs
- 3 c. all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1 c. mashed banana
- 2/3 c. buttermilk
- 1 Tbsp. vanilla extract
- 1 c. chopped pecans
- Chocolate Frosting (recipe follows)
- Place chocolate in top of a double boiler; bring water to a boil.
- Reduce heat to low; cook until chocolate melts.
- Set aside to cool.
- Cream butter.
- Gradually add sugar, beating well with an electric mixer.
- Add eggs, one at a time, beating well after each addition.
- Combine flour, baking powder, soda and salt; add to creamed mixture alternately with banana, buttermilk and melted chocolate, beginning and ending with flour mixture.
- Mix well after each addition.
- Stir in vanilla and pecans.
