Black Vinegar Trotters
- 1 pig 's trotter, 1.5kg - cut into serving pieces
- 1 11/16 cups black vinegar
- 2 1/8 cups water
- 7 ounces old ginger skinned and smashed lightly
- 2 1/16 cups brown sugar
- 1 tablespoon light soy sauce
- 1 salt to taste
- Method:BLANCH trotter pieces in boiling water. Remove and drain well. Heat 2 tbsp sesame oil and 1 tbsp cooking oil, fry ginger till golden brown and aromatic.
- Dish out and transfer ginger into a claypot and add the black vinegar, water and brown sugar then bring to a boil.
- Simmer for 30 minutes till ginger turns soft. Add the trotter and simmer till it is soft and tender.
- Bring a steamer with water to a rolling boil. Place the deep dish with the bundle of herbal chicken to steam for 1 to 1 1/2 hours. Top up the water in the steamer if necessary.
- When done, remove dish, open up the bundle and serve hot.
