Garden Frittata
- 6 eggs
- 1/4 teaspoon dried basil leaves, crushed
- 1 tomato small, seeded and chopped
- 1/2 cup cucumber chopped
- 1/4 cup red onion finely chopped
- 1/4 cup orange bell pepper
- 1 cup shredded mozzarella cheese about 4 oz
- 1 cup baby spinach leaves
- salad wish-bone, spritzers italian vinaigrette dressing
- Whisk eggs with basil in medium bowl. Season, if desired, with salt and ground black pepper; set aside.
- Combine tomato, cucumber, onion and orange pepper in another medium bowl; set aside.
- Cook egg mixture in 10-inch nonstick skillet sprayed with nonstick cooking spray, covered, over medium-low heat 5 minutes or until set. Top with 3/4 cup cheese. Broil, if desired, to melt cheese. Slide eggs out onto serving platter. Top with spinach, then vegetable mixture. Sprinkle with remaining 1/4 cup cheese. Spritz generously with Wish-Bone(R) Salad Spritzers(R) Italian Vinaigrette Dressing. To serve, cut in wedges.
