Quinoa Fried Rice @ Thegarlicdiaries
- 1 1/2 cups quinoa
- 3 cups water
- 3 carrots
- 3 cloves garlic
- 7 scallions
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1/4 cup frozen peas
- 2 eggs
- 1/4 teaspoon ginger grated
- Combine the water and quinoa into a medium pot and bring to a boil
- Cover, reduce to a simmer, and cook for 15 minutes
- Meanwhile, peel and dice your carrots, mince your garlic, slice your scallions, and grate your ginger
- Heat a wok or large saute pan over medium/medium-high heat and add a little vegetable/canola oil
- Add your veggies in when the pan is hot
- Cook veggies, stirring often, for about five minutes
- When the quinoa is done, transfer to a sieve and push a spoon down on top of it to squeeze out any excess moisture
- Add the quinoa in with the veggies and cook, stirring frequently for a few minutes
- Make a space in the pan and cook your eggs for about 10 seconds before stirring them in with the rest of the quinoa and veggies
- Add your soy sauce, sesame oil, and sriracha and stir together
- Add your frozen peas and cook for another five minutes
- Garnish with extra scallions
