Quinoa Fried Rice @ Thegarlicdiaries

  1. Combine the water and quinoa into a medium pot and bring to a boil
  2. Cover, reduce to a simmer, and cook for 15 minutes
  3. Meanwhile, peel and dice your carrots, mince your garlic, slice your scallions, and grate your ginger
  4. Heat a wok or large saute pan over medium/medium-high heat and add a little vegetable/canola oil
  5. Add your veggies in when the pan is hot
  6. Cook veggies, stirring often, for about five minutes
  7. When the quinoa is done, transfer to a sieve and push a spoon down on top of it to squeeze out any excess moisture
  8. Add the quinoa in with the veggies and cook, stirring frequently for a few minutes
  9. Make a space in the pan and cook your eggs for about 10 seconds before stirring them in with the rest of the quinoa and veggies
  10. Add your soy sauce, sesame oil, and sriracha and stir together
  11. Add your frozen peas and cook for another five minutes
  12. Garnish with extra scallions
