Summer Shrimp Salad
- 1 (12 oz.) pkg. shell macaroni
- 1 tsp. salt
- 1/4 c. chopped green onions
- 1/4 c. chopped green pepper
- 1 medium cucumber, seeded and diced
- 1 c. chopped celery
- 1 c. sliced black olives
- 2 medium tomatoes, seeded and diced
- 2 (4 1/2 oz. each) cans shrimp
- 1 tsp. lemon juice
- 1/4 tsp. pepper
- 1 tsp. salt
- 1 3/4 c. salad dressing
- 1/4 c. cream
- Cook macaroni according to package directions.
- Rinse with cold water and drain well.
- Rinse and drain shrimp.
- Sprinkle lemon juice over shrimp.
- Carefully fold shrimp, onions, pepper, cucumbers, celery, olives and tomatoes into macaroni.
- Sprinkle with salt and pepper.
- Blend salad dressing and cream and fold into salad.
- Serve on lettuce leaves and garnish with grated Parmesan cheese.
- Yield:
- 12 servings.
