Purple And Red Potato Salad
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar or white
- 2 teaspoons dijon mustard
- 1 shallot small, sliced
- 1 pound baby purple potatoes
- 1 pound baby red potatoes
- 2 scallions chopped
- 4 red radishes small, cubed
- 1/2 cup seedless cucumber diced
- 1 medium tomato diced
- 1/2 cup chickpeas cooked
- 1 tablespoon fresh parsley leaves chopped
- 1 tablespoon fresh thyme leaves chopped
- Whisk together olive oil, vinegar, mustard and shallot. Season. Set aside.
- Steam potatoes for 10 mins, or until fork tender. Let cool slightly then cut into cubes. Toss with vinaigrette then let cool to room temperature.
- Just before serving, add remaining ingredients and toss to combine. Season.
