Purple And Red Potato Salad

  1. Whisk together olive oil, vinegar, mustard and shallot. Season. Set aside.
  2. Steam potatoes for 10 mins, or until fork tender. Let cool slightly then cut into cubes. Toss with vinaigrette then let cool to room temperature.
  3. Just before serving, add remaining ingredients and toss to combine. Season.
