Black Beans And Rice
- 1 small bag black beans
- 1 c. chopped green pepper
- 2 bouillon cubes (chicken)
- 1/2 tsp. pepper
- 2 Tbsp. wine vinegar
- 1 Tbsp. oil
- 1 c. chopped onion
- 5 cloves garlic, minced
- 1 tsp. salt
- 1/4 tsp. crushed red pepper
- 6 oz. can tomato paste
- cooked rice
- sour cream
- chopped tomato and onion
- Soak beans in water for 6 hours; drain.
- Or for faster preparation, bring beans to a simmer; turn off and let sit for 1 hour, then drain.
- Saute until tender the oil, onion, green pepper and garlic.
- Add to drained beans.
- Cover beans with water, just barely.
- Add bouillon cubes, salt, pepper, crushed red pepper and wine vinegar.
- Lamb shanks or pork can be added now (optional).
