Earl Grey Creme & Clementine Supremes
- 3 clementines
- earl grey tea Kusmi Tea Polish Taste No. 18, a blend of black teas from China and Ceylon flavored bergamot, lemon, and lime or tea bags.
- cream 65 cl. liquid
- 2 teaspoons sugar
- 7/8 cup powdered sugar
- 1 1/4 teaspoons agar agar
- 10 cups milk
- 2 tablespoons vanilla ground
- Supreme the clementines and set aside.
- Soak the tea bags in a small amount of hot water for a few minutes.
- In a medium-size saucepan, stir together cream, brewed tea, and tea bags over low heat for at least 10-15 minutes.
- Remove teabags.
- Add the sugar and powdered sugar, continue stirring.
- Add agar agar, bring to boil, stirring continuously.
- Once the mixture has slightly thickened, remove from heat.
- Add milk and ground vanilla, mix.
- Divide the cream in 8 small dessert cups, and refrigerate for least 2 hours, or until mixture sets completely.
- To serve, top off with clementine supremes.
