Fruit Whipped Cream Dressing

  1. Melt the butter in the top of a double boiler and stir in flour, sugar and salt.
  2. Add fruit juices gradually and cook over boiling water, stirring constantly, until the mixture thickens. Stir a little of the hot mixture into the egg yolks, then stir the egg yolks into the rest of the hot mixture.
  3. Cook about 2 minutes, stirring constantly.
  4. Chill covered.
  5. Whip the cream until stiff. Add the chilled dressing to the whipped cream and beat slightly to blend.
  6. Makes 1 cup.
