Meatball Casserole
- 1/2 onions
- 2 cloves garlic
- 2 tablespoons vegetable oil
- 1 pound ground beef
- 1 eggs
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon dijon mustard
- 1 1/2 tablespoons finely chopped fresh parsley
- 1 1/2 teaspoons dri oregano leaves, crush
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 jar (1 lb. 8 oz.) Ragu(R) Old World Style(R) Pasta Sauce
- 2 cups part-skim mozzarella cheese shredded, about 8 oz.
- Preheat oven to 350u0b0.
- Process onion and garlic in food processor until finely chopped. Heat olive oil over in 8-inch skillet over medium heat and cook onion mixture, stirring occasionally, 5 minutes or until onion is translucent. Remove from heat and let cool completely.
- Combine onion mixture with remaining ingredients except mozzarella cheese and Pasta Sauce in large bowl; shape into 20 (2-in.) meatballs.
- Arrange meatballs in 13 x 9-inch baking dish. Bake 25 minutes; pour Pasta Sauce over meatballs, then sprinkle with cheese. Bake an additional 10 minutes or until meatballs are thoroughly cooked. Remove from oven and let stand 5 minutes before serving.
