Cinnamon Cake With A Crumb Topping

  1. For the Cake
  2. Preheat oven to 350 degrees. Sift dry ingredients together set aside.
  3. Cream together the butter and sugar, beat until mixture is pale in color, 3-5 minutes.
  4. Beat in eggs, one at at time, until eggs are incorporated. Add 1/3 of the dry ingredients, mix until incorporated, add 1/2 of the milk, mix until incorporated, 1/3 of the dry ingredients until incorporated, the rest of the milk, mix and finish with the dry. Mix until smooth but do not over mix!
  5. Pour mixture into a greased loaf pan and top with crumb topping.
  6. To make crumb topping:
  7. Add brown sugar, oats, flour, butter and cinnamon in a bowl and using a pastry knife or 2 forks. The purpose is to create evenly sized pieces of butter, coated with the sugar, oats and cinnamon.
  8. Bake cake for 50-60 minutes or until a fork inserted in the middle comes out dry. Enjoy!
