Cinnamon Cake With A Crumb Topping
- 1 1/2 sticks butter
- 1 cup sugar
- 2 large eggs
- 4 1/2 cups flour
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 3/4 cup milk
- crumb topping
- 1/2 cup brown sugar
- 1/3 cup old fashioned oats not instant
- 1/2 cup flour
- 3 tablespoons butter room temperature
- 1/4 teaspoon cinnamon
- For the Cake
- Preheat oven to 350 degrees. Sift dry ingredients together set aside.
- Cream together the butter and sugar, beat until mixture is pale in color, 3-5 minutes.
- Beat in eggs, one at at time, until eggs are incorporated. Add 1/3 of the dry ingredients, mix until incorporated, add 1/2 of the milk, mix until incorporated, 1/3 of the dry ingredients until incorporated, the rest of the milk, mix and finish with the dry. Mix until smooth but do not over mix!
- Pour mixture into a greased loaf pan and top with crumb topping.
- To make crumb topping:
- Add brown sugar, oats, flour, butter and cinnamon in a bowl and using a pastry knife or 2 forks. The purpose is to create evenly sized pieces of butter, coated with the sugar, oats and cinnamon.
- Bake cake for 50-60 minutes or until a fork inserted in the middle comes out dry. Enjoy!
