Banana Cream Cake
- 1 c. plus 2 1/2 Tbsp. whole wheat flour
- 3/4 tsp. vanilla
- 1/2 tsp. plus 3/4 tsp. baking soda
- 2 egg whites, beaten
- 1/4 tsp. cream of tartar
- 1/2 tsp. cinnamon
- 1/8 tsp. ground nutmeg
- 3/4 c. honey
- 2 1/2 Tbsp. pure maple syrup
- 1/2 c. boiling water
- 1 ripe banana, pureed
- 1 ripe banana, sliced
- 1/2 c. chopped dates
- 1/2 recipe Vanilla Pudding
- 1 recipe Caramelized Banana Topping
- Preheat oven to 325u0b0.
- In large mixing bowl, combine flour, 1/2 teaspoon baking soda, cream of tartar, cinnamon and nutmeg. Set aside.
- In medium bowl, mix honey, maple syrup, vanilla, egg whites, pureed banana and sliced banana.
- Stir into flour mixture and mix until just blended.
