Frozen Waldorf Salad
- 9 oz. can crushed pineapple
- 2 eggs, slightly beaten
- 1/2 c. sugar
- 1/4 c. lemon juice
- 1/8 tsp. salt
- 1/4 c. mayonnaise
- 2 1/2 c. unpared apples, diced
- 1/3 c. celery, diced
- 1/2 c. walnuts, chopped
- 1/3 c. mini marshmallows
- 1/2 c. whipping cream
- 1 apple, unpared, cut in thin wedges and dipped in lemon juice
- Drain pineapple; reserve syrup.
- Mix in a saucepan syrup, eggs, sugar, lemon juice and salt.
- Cook over low heat stirring constantly until thickened (about 20 minutes).
- Cool, then fold in mayonnaise.
- Combine pineapple, diced apples, celery, nuts and marshmallows.
- Mix well.
- Beat whipped cream until it peaks.
- Fold whipped cream into cooled egg mixture.
- Combine fruit and egg mixture.
- Turn into mold.
- Garnish with apple wedges.
- Freeze until serving time.
