Cupcake Omelets

  1. Place the egg whites in a bowl, and with a electric mixer beat them until a bit foamy (about 5 minutes). This is what will make the omelets puffy and airy.
  2. Add to the eggs whites the beaten yolks and fold into the whites slowly.
  3. Add the rest of the ingredients and place mixture into the cupcake tray (preferably silicon, so there is no oil or butter involved), do not fill completely leave at least half a centimeter up. The mixture when cooking will expand.
  4. Bake in the oven for 20 minutes over 350 degrees. Each oven is different, so make sure your mixture is not raw.
  5. Let it rest after cooking for 5 minutes and serve warm.
