Sausage, Rice & Sweet Vidalia Onion Casserole
- 14 ounces sausage Johnsonville(R) Beddar with Cheddar, cut bite-sized pieces
- 1/2 cup butter
- 1 vidalia onion large chopped
- 10 3/4 ounces condensed cream of mushroom soup
- 1/2 cup half and half
- 8 ounces monterey jack cheese Colby-, divided
- 4 ounces pimento diced, drained
- 2 teaspoons hot sauce
- 1 teaspoon garlic powder
- 1 cup buttery crackers crushed
- 2 cups cooked rice
- fresh parsley to garnish
- Preheat oven to 350u0b0F
- Prepare rice according to cooking directions; set aside
- Melt butter in a large skillet; add onions and saute until tender
- Spray 9-in. x 13-in. baking dish with nonstick cooking spray
- Combine the sausage, rice, onions, soup, half and half, 1 cup cheese, pimento, hot sauce, and garlic powder; spoon into baking dish
- Sprinkle with remaining cheese. Top with cracker crumbs
- Bake for 30 minutes or until crackers are golden brown
