Crab Puffs
- 1 (6 1/2 oz.) can crab meat, drained and flaked
- 1/2 c. grated sharp Cheddar cheese
- 3 green onions, chopped
- 1 Tbsp. Worcestershire sauce
- 1 tsp. dry mustard
- 1 c. water
- 1/2 c. butter
- 1 c. flour
- 4 eggs
- Mix first five ingredients well and set aside.
- Combine water and butter in a large saucepan and bring to a boil.
- Remove from heat and immediately add flour, beating until mixture forms a ball.
- Add eggs, one at a time, beating thoroughly after each one. Stir in crab mixture.
- Drop by 1/2 teaspoons onto ungreased baking sheet.
- Bake 15 minutes at 400u0b0, then reduce heat to 350u0b0 and bake 10 minutes more.
- Unbaked puffs can be frozen on baking sheet and transferred to plastic bags.
- Heat without thawing at 375u0b0 until crisp.
- Makes 60 puffs.
