Crab Puffs

  1. Mix first five ingredients well and set aside.
  2. Combine water and butter in a large saucepan and bring to a boil.
  3. Remove from heat and immediately add flour, beating until mixture forms a ball.
  4. Add eggs, one at a time, beating thoroughly after each one. Stir in crab mixture.
  5. Drop by 1/2 teaspoons onto ungreased baking sheet.
  6. Bake 15 minutes at 400u0b0, then reduce heat to 350u0b0 and bake 10 minutes more.
  7. Unbaked puffs can be frozen on baking sheet and transferred to plastic bags.
  8. Heat without thawing at 375u0b0 until crisp.
  9. Makes 60 puffs.
