Green Chorizo

  1. Using a food processor or blender, puree the spinach, coriander, vinegar, garlic, oregano, bay leaf, cloves, salt, a pinch of cumin, coriander seeds, Serrano chilies, water, pumpkin seeds, and onion until smooth.
  2. Add this mixture to the meat and mix using your hands.
  3. In a saucepan, add vegetable oil and fry until the meat is cooked.
  4. Serve in tortillas as chorizo tacos.
  5. To store, place in resealable plastic bags to refrigerate or freeze.
