Green Chorizo
- 1 bunch spinach
- 1 bunch coriander
- 1/4 cup vinegar
- 2 cloves garlic
- 1 teaspoon oregano
- 2 bay leaves dried
- 2 cloves
- 3 teaspoons salt
- cumin
- 1 teaspoon coriander seeds
- 2 serrano chilies seeded and deveined
- 1/2 cup water
- 1 tablespoon pumpkin seeds
- 1/4 onion chopped
- 500 grams pork meat ground
- vegetable oil
- tortillas
- Using a food processor or blender, puree the spinach, coriander, vinegar, garlic, oregano, bay leaf, cloves, salt, a pinch of cumin, coriander seeds, Serrano chilies, water, pumpkin seeds, and onion until smooth.
- Add this mixture to the meat and mix using your hands.
- In a saucepan, add vegetable oil and fry until the meat is cooked.
- Serve in tortillas as chorizo tacos.
- To store, place in resealable plastic bags to refrigerate or freeze.
