Peanut Butter Thumbprints

  1. Heat oven to 350u0b0.
  2. In large mixing bowl, beat butter, brown sugar and peanut butter until well blended.
  3. Add eggs and vanilla; beat well.
  4. Stir together flour, baking powder and baking soda. Gradually add to peanut butter mixture.
  5. Shape dough into 1-inch balls; roll in peanuts.
  6. Place on ungreased cookie sheet.
  7. Bake 8 to 10 minutes or until cookies are just set.
  8. Press thumb gently in center of each cookie; cool slightly.
  9. Remove cookies from sheet.
  10. Cool completely.
  11. Prepare filling.
  12. Spoon or pipe about 1/2 teaspoon filling into each thumbprint.
