Chicken Cacciatore
- 2 tablespoons olive oil
- 3 1/3 pounds chicken pieces
- 1 onion chopped
- 1 clove garlic crushed
- 1/2 cup dry white wine
- 1/2 cup chicken stock
- 14 ounces diced tomatoes
- 1 tablespoon tomato paste
- 1 tablespoon fresh basil chopped, plus additional to serve
- 1 teaspoon sugar
- 1/2 cup black olives
- 3 anchovy fillets chopped

- Preheat the oven to 350u0b0F. Heat oil in a heavy-bottomed skillet on high heat. Brown chicken all over. Transfer to a baking dish.
- Saute onion and garlic in same pan for 2-3 mins, until onion is tender. Add wine and simmer until reduced by half.
- Stir in stock and simmer for 2 mins. Stir in tomatoes, tomato paste, basil and sugar. Season to taste. Pour sauce over chicken.
- Bake, covered, for 1 hour. Stir in olives and anchovies. Bake, uncovered, for a further 5-10 mins. Sprinkle with additional basil. Serve with pasta and salad.
