Healthy Blueberry Oat Muffins

  1. Preheat oven to 400 degrees.
  2. Spray a muffin tin with non-stick cooking spray or line with paper liners.
  3. Mix flour, oats, cane sugar, cinnamon, salt, and baking powder and mix.
  4. In a separate bowl, whisk together almond milk, dairy free butter, eggs, and vanilla extract.
  5. Add wet ingredients into bowl of dry ingredients and stir until blended.
  6. Add blueberries in.
  7. Divide batter between the muffin cups, press a few blueberries into top of muffin, and bake for 20 minutes, or until golden brown and a toothpick inserted comes out clean.
  8. Remove from oven and let cool.
