Healthy Blueberry Oat Muffins
- 1 1/2 cups whole wheat flour
- 1 cup unsweetened almond milk
- 3/4 cup oats Old Fashioned Traditional
- 1/2 cup organic cane sugar
- 1/4 cup dairy free butter
- 2 eggs
- 1 tablespoon baking powder
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1/2 sea salt
- 1 cup fresh blueberries
- Preheat oven to 400 degrees.
- Spray a muffin tin with non-stick cooking spray or line with paper liners.
- Mix flour, oats, cane sugar, cinnamon, salt, and baking powder and mix.
- In a separate bowl, whisk together almond milk, dairy free butter, eggs, and vanilla extract.
- Add wet ingredients into bowl of dry ingredients and stir until blended.
- Add blueberries in.
- Divide batter between the muffin cups, press a few blueberries into top of muffin, and bake for 20 minutes, or until golden brown and a toothpick inserted comes out clean.
- Remove from oven and let cool.
