Coconut Curry With Shrimp

  1. In a large pot, heat the oil.
  2. Add onion and minced garlic, saute for a few minutes.
  3. Add chili and curry powder, continue cooking for a few minutes over low heat.
  4. Add the prawns or shrimp, cover with coconut milk.
  5. Cook for about 10 minutes.
  6. Add lime juice and coconut, stirring constantly.
  7. Season with salt and pepper, remove from heat.
  8. To serve, sprinkle with chopped coriander. Accompany with basmati rice.
