Coconut Curry With Shrimp
- 1 tablespoon olive oil
- 1 onion small, chopped
- 1 garlic clove minced
- 1/2 green chili seeded and shredded
- 1 teaspoon curry powder
- 7/8 pound prawns or shrimp
- 1 11/16 cups coconut milk
- 3 limes juice
- 1 tablespoon grated coconut
- salt to taste
- ground black pepper to taste
- 1 sprig coriander chopped
- In a large pot, heat the oil.
- Add onion and minced garlic, saute for a few minutes.
- Add chili and curry powder, continue cooking for a few minutes over low heat.
- Add the prawns or shrimp, cover with coconut milk.
- Cook for about 10 minutes.
- Add lime juice and coconut, stirring constantly.
- Season with salt and pepper, remove from heat.
- To serve, sprinkle with chopped coriander. Accompany with basmati rice.
