Frosted Coffee Cake Muffins

  1. Preheat the oven to 180 Celsius.
  2. Dissolve the coffee in the milk and add the vanilla.
  3. Sift together the flour, salt, and baking powder.
  4. Cream together the butter and sugar. Add the egg yolks and beat to incorporate.
  5. Add the flour mixture alternately with the milk mixture. Mix well and then stir in the walnuts.
  6. Beat the egg whites until peaks are formed. Stir a third of the whites into the batter. Gently fold the rest of the whites into the batter, mixing carefully.
  7. Pour the batter into muffin tins. Bake for 15 minutes, until an inserted toothpick comes out clean.
  8. Remove from oven and let cool for 2-3 minutes before removing from tin. Cool completely.
  9. Make the frosting by mixing the sugar and water together. Add the cocoa powder and mix. Add the oil and mix well.
  10. Spread the muffins with the frosting. Serve.
