Cilantro Tofu Bean Burgers
- 3 cups pinto beans cooked
- 6 ounces firm tofu
- 1 egg
- 3 tablespoons bread crumbs
- 5 tablespoons chopped cilantro
- 1 onion finely chopped
- 1 poblano pepper small, chopped
- 1 garlic clove minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 bunch cilantro
- 1 garlic clove
- 2 green onions
- 3/4 cup mayo or vegenaise
- 1 teaspoon lime juice
- Start with the sauce. Put all the ingredients to food processor and process until smooth.
- For the burgers put beans, egg and tofu to a food processor and process until smooth. If you processor is small and not very powerful like mine, you might want to do it in portions.
- Meanwhile saute the onion, poblano pepper and garlic until soft. Season with salt.
- In a bowl combine burger mix with cilantro, sauteed onions and peppers, Salt, pepper, cumin, smoked paprika and breadcrumbs. Mix well. If necessary add more bread crumbs.
- Form uniform patties and fry on a greased grilling pan on both sides. Be very gentle when turning over because they might break easily.
- Serve on a bun with some green mayo.
