Macaroni Cheese
- 2 cups macaroni
- 1 cup cheese grated
- 1 tablespoon Parmesan cheese
- 2 tablespoons butter
- 1 cup flour plain
- 1 cup milk
- 1 onions medium
- 1 teaspoon garlic crushed
- 1 teaspoon nutmeg
- salt
- pepper
- 1 egg yolks
- 1 cup cream
- Finely dice onion.
- Cook macaroni in boiling salted water until "al dente".
- Melt the butter in a saucepan and add the flour, stirring with a wire whisk. Add the milk, stirring rapidly with whisk. When blended and smooth, add the onion, garlic, pepper and nutmeg. Simmer gently for 5 minutes stirring the bottom regularly to ensure it doesn't burn.
- Add cooked macaroni and bring to boil.
- Remove from heat and whisk in combined egg yolk and cream. Sauce should be thick and creamy.
- Serve sprinkled with extra cheese and paprika.
