Chocolate Truffles

  1. Melt the dark chocolate over a double boiler with the heavy cream and let the mixture cool slightly.
  2. Cream the butter with the sugar until light and foamy.
  3. Add the ground cookies, bittersweet cocoa, and ground coffee.
  4. Add the melted dark chocolate and heavy cream mixture.
  5. Add a few drops of rum.
  6. Combine the ingredients until smooth, uniform, and firm in consistency.
  7. Refrigerate for at least one hour to set completely.
  8. Shape the mixture into small balls, wet your hands occasionally, and coat the balls with the coconut flakes.
  9. Place the truffles on a baking sheet and refrigerate for at least two hours.
