Butter Bean Stew
- 1 3/8 cups light beer
- 1 11/16 cups vegetable stock
- 2 onions medium, finely diced
- 3 cloves garlic finely chopped
- 2 red peppers diced
- 2 chilli peppers finely diced
- 1 bunch coriander chopped
- 4 tablespoons white wine vinegar
- 2 cans butterbeans drained
- 1 teaspoon smoked paprika
- 1/2 teaspoon oregano
- 4 tablespoons lime juice
- Bring the beer, stock, onions, garlic, peppers, and chili to a boil, cover and simmer for about 5 minutes.
- Blend the vinegar and most of the cilantro together, leaving some for garnish. Add to the vegetables along with the beans, paprika, oregano, and lime juice. Simmer for about 10 minutes, seasoning with salt and pepper.
- Serve with a garnish of the remaining cilantro.
