Penne With Roasted Vegetables And Goat Cheese
- 1 red onion medium, cubed
- 1 zucchini small, cubed
- 1 red pepper medium, cut into slices
- 1 cup button mushroom sliced
- 1 tablespoon fresh oregano
- garlic powder
- olive oil
- 3 cups penne pasta
- 28 ounces stewed tomato diced
- 1/2 cup red wine
- 1/4 cup fresh basil
- 1/2 teaspoon black pepper
- 1/2 cup fresh parsley chopped
- 1 cup goat cheese
- Preheat broiler to 350 degrees Fahrenheit.
- In a large mixing bowl, combine the onion, zucchini, red pepper, and mushrooms. Combine the oregano and garlic powder and toss with vegetables. Place vegetables on a non-stick baking dish and drizzle with olive oil.
- Set oven to broil at 350 degrees and broil vegetables for 5 minutes. Flip vegetables and broil another 2 minutes.
- Cook pasta in 4 cups boiling water for about 8 minutes, drain and rinse.
- Simmer the tomatoes, red wine, basil and black pepper in a large saute pan. Add the roasted vegetables, cooked pasta and parsley. Heat another 2 minutes and then add grated goat cheese. Mix well and serve.
