Panna Cotta
- 2 1/2 cups heavy cream
- 1/3 cup granulated sugar
- 2 tablespoons honey
- 1 orange rind thinly sliced
- 1 vanilla bean halved lengthwise
- 1/2 cup milk
- 1 1/2 tablespoons powdered gelatin
- 4 tablespoons Grand Marnier
- berries macerated, to serve
- mint sprigs fresh, to decorate
- Lightly grease 6 - 5 oz ramekins.
- Bring 1 1/4 cups cream with sugar, honey, orange rind and vanilla bean to a boil. Set aside. Meanwhile, combine milk and gelatin. Set aside for 5 mins, to bloom. Whisk bloomed gelatin into hot cream mixture along with Grand Marnier. Stir until gelatin dissolves. Strain then let cool. Once cooled, whisk remaining cream to stiff peaks then fold in. Distribute between ramekins. Tap gently on a hard surface to release any air pockets then chill until set.
- Dip ramekins into very hot water then turn out onto serving plates. Serve with macerated berries and fresh mint.
