Quattro Formaggi Tagliatelle
- 1 pound tagliatelle pasta
- 2/3 cup white wine
- 8 ounces mascarpone cheese
- 4 ounces taleggio cheese rind removed
- 4 grams provolone cheese grated
- 1 pinch ground nutmeg
- 1/4 cup grated Parmesan cheese
- salad Green, to serve
- Cook pasta in large saucepan of boiling salted water according to package directions.
- Meanwhile, bring wine to a boil in small saucepan on high heat. Boil for 3 mins, or until reduced by half. Reduce heat to low; add mascarpone, taleggio, provolone and nutmeg, stirring continuously until cheeses have melted and formed a sauce. This should take about 5 mins.
- Drain pasta and toss with sauce in bowl. Season with salt and black pepper to taste. Sprinkle with Parmesan cheese and serve with a simple green salad.
