Orange Chicken
- 1 pound boneless skinless chicken breast cubed
- 1/2 teaspoon salt
- 1 teaspoon crushed black pepper
- 2 tablespoons extra-virgin olive oil
- 2 cloves minced garlic
- 1/2 cup orange juice no pulp
- 1/4 cup pineapple juice
- 3/4 cup honey to your taste
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1/2 teaspoon ground ginger
- 2 teaspoons crushed red pepper
- 2 tablespoons cornstarch
- 2 teaspoons sesame seeds
- pineapple chunks Optional-
- In a pan, warm olive oil. Add cubed chicken to pan, sprinkle with salt and pepper. Cook chicken until done and no longer pink.
- In a separate bowl add garlic, orange juice, honey, soy sauce, rice vinegar, ground ginger and red pepper. Stir ingredients until mixed well.nnce mixed add small amount of cornstarch to help thicken.
- Pour sauce mixture over chicken and simmer for 5-10 minutes.ne have also added pineapple chunks during the simmering stage for added flavor. Sauce will thicken as it simmers
- Remove from heat and serve over a bed of rice. Top with sesame seeds. nou may spoon sauce over rice if desired.
