Irish Stew
- 1 pound lamb cut into cubes
- 1/2 pound onions peeled and cut into wedges
- 1 clove garlic peeled and finely chopped
- 3 tablespoons oil
- 3 cups stock instant
- 2 pounds cabbage quartered, and stalk removed
- 1/4 pound celery washed and chopped
- 1/2 pound carrots cut into slices
- 1 pound potatoes cut into slices
- white pepper
- 1/2 teaspoon cumin seeds
- 1 bunch parsley washed and chopped finely
- Heat the oil in a large frying pan and brown the meat on all sides. Add the onions and garlic and saute with the meat. Add the stock and cook for 2 hours. In the meantime, wash the cabbage and cut into strips.
- About 30 minutes before the end of cooking, add the vegetables, cumin, salt and pepper. Before serving, season to taste and garnish with parsley.
