Arroz Con Pollo
- 6 chicken thighs /Drumsticks
- 2 cups rice Long Grain, Basmati, or Jasmine
- 1 cup vegetables Carrots, Corn, Peas
- 2 tablespoons garlic
- 4 tablespoons olive oil
- 1 lime
- 1 cilantro Bush
- salt
- 4 cups chicken or Vegetable Broth
- 3 tablespoons pisco or Beer of your choice
- 1 red onion
- aji amarillo Optional
- 2 peppers Habanero, Optional
- Before the day begins, thaw out the chicken on a mixing bowl. Marinate the chicken with the olive oil, garlic, lime, salt, pepper, and cumin. Let sit and marinade until it's time for cooking dinner!
- In a Dutch Oven (or oven-safe 4-quart pot), place on stovetop on medium-high heat. Once hot enough, place chicken in the pot and brown.
- While chicken is cooking, chop up vegetables and throw in the pot.
- Once chicken is golden brown, reduce heat to medium heat, stirring the vegetables with the chicken to ensure that everything is being sauteed. Squeeze in the lime to enhance the flavor. Optionally, add Pisco/beer and the Aji amarillo creamy sauce to give a nice flavor to the stir.
- Chop very finely the cilantro bush after running it over water. Throw into the pot and stir. Mix for several minutes.
- Preheat the oven to 375 degrees.
- Drop in 4 cups of broth into the pot, followed by two cups of rice. Dazzle in more salt and pepper. Stir and mix thoroughly on medium heat. Note that the chicken or rice need not be fully cooked at this point; the oven shall take care of that.
- Once the oven is preheated, stick the entire pot with cover into the oven and set timer for 40 minutes.
- If you are interested in a habanero pepper side dish, cut up a few habanero peppers and put skin and seeds in a small sauce dish. Pour a tablespoon of olive oil, salt, and pepper, and then mix together.
- Once finished in the oven, bring back to stove top and examine. The chicken, rice, and vegetable combination should have a greenish color from the cilantro.
