Green Ceviche With Guacamole
- 7/8 pound perch fillets large, sushi-grade, frozen and defrosted
- 1 clove garlic chopped
- 2 spring onions chopped
- 1 bunch fresh coriander or 20 gr. chopped
- 1 red chili pepper fresh, chopped
- 2 limes
- sea salt
- ground black pepper
- Cut the perch into small pieces, ideally while still slightly frozen to aid cutting. Season and set aside.
- In a food blender, add the garlic, chili, spring onions, coriander and lime juice. Blend all the ingredients into a sauce.
- Pour the sauce over the fish and stir well so that the fish is infused with the flavor.
- Leave to rest in a colander over a bowl. As the fish marinates the liquid will drain into the bowl.
- Leave in the refrigerator until ready to serve.
- Serve with guacamole and tortilla chips.
