Green Ceviche With Guacamole

  1. Cut the perch into small pieces, ideally while still slightly frozen to aid cutting. Season and set aside.
  2. In a food blender, add the garlic, chili, spring onions, coriander and lime juice. Blend all the ingredients into a sauce.
  3. Pour the sauce over the fish and stir well so that the fish is infused with the flavor.
  4. Leave to rest in a colander over a bowl. As the fish marinates the liquid will drain into the bowl.
  5. Leave in the refrigerator until ready to serve.
  6. Serve with guacamole and tortilla chips.
