Crispy Santa Fe Chicken

  1. Preheat oven to 425 degrees.
  2. Dip chicken in egg then in cracker crumbs, turning to evenly coat both sides of each piece. Pressing coating into chicken.
  3. Place in 13x9-inch baking dish sprayed with cooking spray; drizzle with butter.
  4. Bake 20 min. or until chicken is done (internal temperature should be 165u0b0F). Top with salsa and cheese; bake 5 min. or until cheese is melted.
  5. Found this on Kraft foods and tweaked it to make it more Mexican-y. Easy to prep and cook....your kids will love it too! You can substitute 1 cup crushed tortilla chips for the crackers or pepper-jack cheese for the 4-cheese blend.
