Crispy Santa Fe Chicken
- 2 chicken breasts halved lengthwise
- 1 egg
- 12 saltines finely crushed
- 1 cup salsa
- 1 cup cheese Mexican-style finely-shredded four, blend
- 2 tablespoons butter melted
- Preheat oven to 425 degrees.
- Dip chicken in egg then in cracker crumbs, turning to evenly coat both sides of each piece. Pressing coating into chicken.
- Place in 13x9-inch baking dish sprayed with cooking spray; drizzle with butter.
- Bake 20 min. or until chicken is done (internal temperature should be 165u0b0F). Top with salsa and cheese; bake 5 min. or until cheese is melted.
- Found this on Kraft foods and tweaked it to make it more Mexican-y. Easy to prep and cook....your kids will love it too! You can substitute 1 cup crushed tortilla chips for the crackers or pepper-jack cheese for the 4-cheese blend.
