Bindi
- 1 pound okra
- 1 yellow onion medium, or 1/2 cup of vagar
- 1 jalapeno
- 4 cloves garlic
- 10 stems cilantro
- 1/4 cup oil
- 1 1/2 teaspoons cumin seed
- 1/2 teaspoon tumeric powder
- 1/4 teaspoon red chili powder or cayyenne pepper powder
- 4 roma tomato or 1/3 cup of crushed tomato
- 3/4 teaspoon salt
- Blend 1 Jalepeno, 4 cloves garlic, and 5-10 stems of cilantro.
- Saute onion until it is light brown (or use vagar).
- Add 1 1/2 tsp of cumin seed, 1/2 tsp of tumeric powder, 1/4 tsp of red chili (or cayanne pepper). Also add the green sauce that was blended.
- Add 4 roma tomatoes (or 1/3 cup of crushed tomato).
- Add 3/4 tsp of salt.
- Mix everything until see oil. Then add okra and mix.
- lower heat and cover the pot to let okra cook for 1/2 hour.
- once okra is soft, add juice from 1 lime.
- bindi should be dry and not sticky or watery.
