Black Radish Noodles With Anchovy Butter
- 4 radishes black, or medium zucchini
- 2 tablespoons olive oil divided
- 2 ounces anchovy filets drained
- 2 cloves garlic
- 1 tablespoon fresh lemon juice
- 2 teaspoons butter
- 1 teaspoon grated lemon peel
- Attach Spiralizer Attachment to your KitchenAid(R) Stand Mixer. Center one radish on fruit and vegetable skewer; attach to Spiralizer. Attach fine spiralizing blade and position at end of radish. Place medium bowl below blade to catch radish. Turn stand mixer to speed 4 and
- process until blade reaches end of radish. Repeat with remaining radishes.
- Combine 1 tablespoon olive oil, anchovies, garlic, lemon juice, butter and lemon peel in food processor; pulse until finely chopped.
- Heat remaining 1 tablespoon olive oil in large skillet. Add radishes; saut. 5 minutes. Add anchovy mixture; cook 1 to 2 minutes or until radishes are evenly coated with anchovy mixture. Serve immediately.
