Easy Vegetarian Chili
- 2 onions mediums, chopped
- 1 clove garlic minced
- 1 teaspoon olive oil
- 2 sweet potatoes mediums, washed and cubed
- 1 envelope chili seasoning /packet of
- 1 ounce tomatoes can whole peeled, tomatoes cut into large
- 1/2 cup wheat uncooked bulger
- 2 ounces black beans cans, thoroughly rinsed and drained
- In a large pan, saute onions and garlic in olive oil, until onions are soft and everyone comes into the kitchen to ask what smells so good.
- Add 5 cups of water and bring to a rolling boil.
- Add sweet potatoes to the water and boil for 10-12 minutes. Sweet potatoes should still be slightly firm when forked.
- Reduce heat to a simmer, and add chili seasoning, tomatoes, bulger wheat.
- Simmer 9-10 minutes, then add beans. If it seems a bit too thick, add some of the reserved tomato juice.
- Continue to simmer until heated through.
