Easy Vegetarian Chili

  1. In a large pan, saute onions and garlic in olive oil, until onions are soft and everyone comes into the kitchen to ask what smells so good.
  2. Add 5 cups of water and bring to a rolling boil.
  3. Add sweet potatoes to the water and boil for 10-12 minutes. Sweet potatoes should still be slightly firm when forked.
  4. Reduce heat to a simmer, and add chili seasoning, tomatoes, bulger wheat.
  5. Simmer 9-10 minutes, then add beans. If it seems a bit too thick, add some of the reserved tomato juice.
  6. Continue to simmer until heated through.
