Sumac Chicken With Salad
- 2 teaspoons sumac
- 2 1/2 tablespoons vegetable oil
- 2 cloves garlic minced
- 1 tablespoon lemon zest
- 21 ounces chicken breasts
- 4 1/2 ounces cherry tomatoes quartered
- 1/2 red onion small, thinly sliced
- 1 red chili fresh long, seeded, thinly sliced
- 1 avocado medium, chopped
- 1 tablespoon lemon juice
- 3 tablespoons flat leaf parsley leaves fresh, chopped
- hummus to serve
- bread Lebanese, to serve
- Combine sumac, 1 tbsp oil, garlic, lemon zest and chicken. Heat 1 tbsp oil in a large frying pan over medium heat. Cook chicken for 6-8 mins per side, or until cooked through. Let rest for 5 mins then slice thickly.
- Meanwhile, combine tomatoes, onion, chili, avocado, lemon juice, remaining oil and parsley in a medium bowl. Season.
- Serve chicken with salad, hummus and Lebanese bread.
