Tuscan Cod & Mussels In Light Vegetable Broth
- 2 tablespoons olive oil
- 1 sweet onion
- 1 zucchini medium, coarsely chopped
- 1 clove garlic
- 14 1/2 ounces plum tomatoes whole peeled, undrained and chopped
- 1/4 cup dry white wine
- 1 pound cod
- 12 mussels
- 2 tablespoons finely chopped fresh parsley
- 1 knorr vegetarian veget bouillon cube crumbled
- Heat olive oil in deep 12-inch nonstick skillet over medium-high heat and cook onion and zucchini, stirring occasionally, 4 minutes. Add garlic and cook 30 seconds. Stir in tomatoes, wine and Knorr(R) Vegetarian Vegetable Bouillon Cube and simmer 2 minutes. Arrange cod and mussels in skillet. Simmer covered 8 minutes or until fish flakes with a fork and mussels shells open. Discard any unopened shells. Sprinkle with parsley and serve with warm crusty bread.
