Crisp & Spicy Chicken Cutlets

  1. Fillet the chicken breasts.
  2. Start at the small end, keeping the knife parallel and flat and cut trough to the wide end.
  3. It's just like filleting a fish.
  4. Next, rinse the chicken and drain them, don't pat them dry.
  5. Put the chicken cutlets in a bowl and add the hot sauce.
  6. Mix them well to be sure the chicken is coated.
  7. Marinate for at least 30 minutes.
  8. Meanwhile preheat the oven to 400.
  9. Spray a rimmed baking sheet with cooking spray.
  10. Mix the Panko crumbs and seasonings.
  11. When the cutlets are ready firmly press cutlets one at a time into the crumb mix, turn and repeat to
