7 Layer Mexican Dip
- 1 large can refried beans (with vegetable shortening)
- 1 small can diced green chilies
- 3 ripe avocados
- 3 Tbsp. lemon juice
- 3/4 c. mayonnaise
- 3/4 c. light sour cream
- 1 pkg. taco seasoning mix
- 1 c. Cheddar cheese, grated
- 1 c. Jack cheese, grated
- 2 small cans ripe olives, sliced and drained
- 1 bunch green onions, chopped (onion greens and all)
- 3 large ripe tomatoes
- Mix the beans and chilies. Spread on serving tray.
- Mash the avocados and mix with lemon juice. Spread over beans.
- Blend mayonnaise, sour cream and taco seasoning. Spread over the avocados.
- Spread Cheddar and Jack cheeses over the mayonnaise layer. Spread onions over the cheese layer.
- Spread olives over the onion layer. Remove seeds from tomatoes, dice and pat very dry; spread over olive layer.
- Serve with chips.
