Broccoli And Cheese Soup
- 1 cup cauliflower chopped
- 1 cup broccoli florets chopped
- 1/2 cup water
- 1 tablespoon braggs liquid aminos
- 1 teaspoon nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon garlic powder
- 1/2 teaspoon lemon juice
- 1/4 teaspoon xanthan gum or other thickener like arrowroot, optional
- 1/2 cup water
- 1/8 block firm tofu pressed lite, cubed
- In two small saucepans, simmer your cauliflower and broccoli (one vegetable in one pan, and likewise with the other).
- Simmer the cauliflower until very very tender, and the broccoli until just tender (make sure there's some crunch.)
- Once the veggies have reached their proper tenderness, drain and transfer all of the cauliflower and half of the broccoli to a blender along with 1/2 cup of water, the Braggs, nooch, seasonings and optional thickener.
- Blend until completely smooth.
- Add this to the remaining broccoli flouters, along with the other 1/2 cup water and the cubed tofu.
- Gently reheat and serve!
